Chillies: Dried / Fresh?
How do you know when to use fresh or dried chillies?

Fresh Chillies have a crunchy taste. They are great for fresh sauces that are prepared on the day of cooking.

Dried Chillies have flavor that fits more stews and restaurant -style sauces, curries and marinades.

* Just remember to start slow if you are not accustomed to eating spicy food. Enjoy!

Growth of Indian cuisine at U.S. Restaurants

Prepared Foods, a prominent magazine that focuses on development trends in the food industry, recently discussed the growth of Indian food in restaurants in the U.S. The article mentions that the appearance of Indian cuisine on restaurant menus has increased 86% in the last 2 years and is projected to increase. Equally as important is that Indian cuisine is making an impact in the casual dining market as well (California Pizza Kitchen, Legal Sea Food and Cosi being some examples).

That is particularly exciting to us, here at Mr. Kooks, because we know the next step in that natural progression is for Indian cuisine and flavors to make its way into American homes. And that’s where our curries and prepared meals can help!

 

Recipes  


Mr. Kooks Tandoori Chicken Wings

Ingredients:

  • 1 lb of Chicken Wings.
  • 1 jars of Mr. Kooks Tandoori Marinade.
  • Lemon Wedges.

Directions:

  1. Coat the Chicken Wings with Mr. Kooks Tandoori Marinade in a plastic zip bag.
  2. Marinade the Chicken overnight (2 days will be perfect).
  3. Remove the Chicken Wings and discard excess marinade.
  4. Grill or Bake in the oven at 400 degrees F for 10 minutes each side.
  5. Squeeze Fresh Lemon Juice and top and garnish with lemon wedges.

 
Tip: Add 2 tsp. of Cayenne Pepper to make it spicy.


Mr. Kooks Chicken Tikka Meat Balls.2

Ingredient:

  • 2 lb ground Chicken.
  • 2/3 -3/4 cup of bread crumbs.
  • 1 egg.
  • 1 tsp. salt.
  • 2 small chopped onions.
  • 1 green chopped green chilli (Optional).
  • 5 tbsp. Mr. Kooks Tandoori Marinade.
  • 5 tbsp. EVOO.
  • 1 jar Mr. Kooks Tikka Masala Sauce.

Directions:

  1. Combine all ingredients except the last 2.
  2. Form a ball. (If it does not roll into a ball, put it in the fridge for say 30 minutes).
  3. Fry the Chicken Balls for 8-10 minutes.
  4. Add the Mr. Kooks Tikka Masala Sauce, cook until it reduces and sticks to the Chicken Balls.
  5. Garnish with cilantro and serve hot.

Mr. Kooks Baked Ziti with Tikka Masala and Pesto

Ingredients:

  • 1/2 pound ziti
  • 1 chopped onion
  • 2 tbsp EVOO
  • 2 minced garlic
  • 2 cups Mr Kooks Tikka Masala Sauce
  • 1/4 tsp Salt
  • 1/2 tsp ground bell pepper
  • 1 cup ricotta cheese
  • 1 1/2 cup grated mozzarella cheese
  • 1/3 cup grated Parmesan Cheese
  • 1/4 cup any regular Pesto Sauce
  • 1/4 cup Diced Mushrooms
  • 1/4 cup Diced Green Bell Pepper

Directions:

  1. Heat the oven to 350 degrees F. Oil an 8 x 8 baking dish.
  2. Boil Water with salt and cook the pasta partially for 6-7 minutes. Drain, Rinse with cold water and drain once again.
  3. Heat 11/2 tbsp oil, add onion, garlic, Mr Kooks Tikka Masala Sauce and Salt. bring to a simmer and add Mushrooms and green bell pepper with a dash of Black pepper on the top.
  4. Combine the ricotta, 1 cup of mozzarella, half of Parmesan, the pesto and a dash of Black Pepper.
  5. Put half of the cooked pasta into the prepared baking dish and top with about a third of the sauce. Spread the ricotta mixture on the sauce in an even layer. Cover with the remaining pasta and then the remaining sauce. Top with the 1/2 cup of mozzarella and Parmesan. Drizzle a little oil.
  6. Bake until bubbling about 30 minutes. Let sit 10 minutes before cutting.
  7. Serve hot with Garlic Bread

Mr. Kooks Indian Vegetarian Crock Pot

Ingredients:

  • 1 16 oz chopped vegetables of your choice
    (canned is fine, but avoid any cans with noodles)
  • 2 tsp Mr. Kooks Vegetable Curry
  • A pinch of salt and pepper
  • 1 cup water
  • 2 Servings of white rice
  • 1-2 pinches of basil

Directions:

  1. Place the vegetables, Mr. Kooks Vegetable Curry, salt, pepper and water in a crock pot or slow cooker. Cook on low for 5 to 6 hours.
  2. Serve with white rice sprinkled with fresh basil.

Mr. Kooks Stir Fry Vegetable with Tikka Sauce

Ingredients:

  • Mixed vegetables (fresh or frozen such as bell peppers, mushrooms, zuchini, cauliflower, broccili)
  • 2 tsp. Mr. Kooks Tikka Sauce (add extra to taste)

Directions:

  1. Mix vegetables with Mr. Kooks Tikka Sauce and heat in frying pan or wok.
  2. Serve and enjoy!
Mr. Kooks Tandoori Chicken Sandwich

Ingredients:

  • 1/2 cup Mr. Kooks Tandoori Marinade
  • 2 Boneless skinless chicken breasts
  • 1 tbsp mayonnaise
  • 4 leafed lettuce
  • 1 sliced onion
  • 1 sliced tomato
  • 4 slices of cheese

Directions:

  1. Marinade the Chicken with Mr. Kook’s Tandoori Marinade.
  2. Grill/Barbecue/Bake the Chicken till cooked.
  3. Spread Mayonnaise on the bread.
  4. Put the Lettuce, Onion, Tomato, Cheese and Chicken on the bread.
  5. Sprinkle some salt and pepper to taste.
  6. Enjoy!

Mr. Kooks Indian Mayonnaise

Ingredients:

  • 1 cup fresh mint leaves
  • 1 cup fresh cilantro leaves
  • 1 cup Jalapeno seeded (if you want it spicy)
  • 3 tbsp chopped red onion
  • 1/2 cup Mayonanise 1 tbsp Mr. Kooks Vegetable Curry Sauce (to give a coconut flavor)

Directions:

  1. Combine all ingredients until well mixed. That’s it
